  • 1 cup (265g) peanut butter, smooth or crunchy (commercial, not natural peanut butter)
  • 1 cup (200g) packed brown sugar
  • 1 large egg

Instructions

1. Mix Ingredients
In a mixing bowl, combine the peanut butter, brown sugar, and egg until a uniform dough forms. The dough will be soft and sticky, so refrigerate for 10 minutes to firm it up for easier handling.

2. Preheat the Oven
Preheat your oven to 350°F (180°C) for standard ovens or 320°F (160°C) for fan/convection ovens. Line two baking trays with parchment paper.

3. Portion the Dough
Using a cookie scoop or a tablespoon, scoop 1-tablespoon portions of dough and place them on the prepared baking trays, leaving about 2 inches (5 cm) of space between each cookie.

4. Shape with Fork
Dip a large fork into a bowl of hot water to prevent sticking, then press down on each dough ball, flattening it to about 2/5 inch (1 cm) thick. Press the fork again at a 90-degree angle to create a crisscross pattern. Re-dip the fork in water as needed.

5. Bake the Cookies
Place both trays in the oven and bake for 10 minutes, swapping the trays halfway through. Bake until the cookies are light golden on the top and slightly golden at the edges. If you prefer crisper cookies, bake for an additional 1–2 minutes.

6. Cool and Store
Allow the cookies to cool completely on the trays. Store in an airtight container at room temperature for up to 4–5 days.
