Ingredients
- 3 large boneless, skinless chicken breasts, sliced lengthwise into thin cutlets

- 6 tbsp (50g) all-purpose flour
- 2 tbsp (30 ml) olive oil
- 2 tbsp (28g) unsalted butter
- 3 cloves garlic, minced
- 1 cup (240 ml) chicken stock
- 1 cup (240 ml) heavy cream (double cream in the UK)
- 1/2 cup (43g) parmesan cheese, freshly grated
- 1 tsp chili flakes
- 1/4 tsp dried oregano
- 1/4 tsp dried thyme
- 1/3 cup sundried tomatoes, chopped
- 1 tbsp fresh basil leaves, chopped
Instructions
1. Prepare the Chicken
Season the chicken cutlets with salt and pepper. Dredge each cutlet in flour, shaking off any excess.
2. Cook the Chicken
In a large skillet, heat the olive oil and butter over medium heat until the butter is melted. Swirl the pan to coat it evenly. Add the chicken cutlets, working in batches to avoid overcrowding, and brown them for 4–5 minutes per side until golden and cooked through. Transfer to a plate and cover to keep warm.
3. Sauté the Garlic
In the same skillet, sauté the minced garlic for about a minute, or until it becomes fragrant. Pour in the chicken stock, and use a wooden spoon to scrape any browned bits from the bottom of the pan.
4. Make the Sauce
Reduce the heat to medium-low, then add the heavy cream and grated parmesan cheese. Stir until the cheese melts and the sauce begins to thicken, about 2–3 minutes. Season with chili flakes, oregano, and thyme, adding salt and pepper to taste.
5. Combine Chicken and Sauce
Add the chopped sundried tomatoes to the skillet, then return the chicken cutlets to the pan. Allow the sauce to simmer for a few more minutes until it thickens slightly and the chicken is heated through.
6. Garnish and Serve
